This recipe is so easy and I like that the protein comes from the chickpeas and the crispiness of the panko or breadcrumbs. If you are trying to limit the meat in your diet, this is the perfect meal.
2 c brown rice
2 tbs olive oil
1 can chickepeas
1 tbs minced garlic
1 tbs cumin
Salt & Pepper to taste
1/4 c panko breading or breadcrumbs
chopped cilantro for garnish (optional)
- Cook rice in a rice cooker or per instructions on the stove top.
- Heat olive oil on skillet. Add chickpeas, minced garlic, cumin, and salt and pepper. Combine and cook this mixture for 3-5 minutes.
- Add the panko or breadrumbs to the chickpeas stirring into the mixture.
- Serve over rice and garnish with fresh cilantro.
Makes 4 servings.
