These muffins pack protein, sweetness and the benefits of flax seed. Each muffin has over 10g of protein. Plus, they are very easy and quick to bake. You can even freeze them for up to up to 3 months.
1 c Smooth Peanut Butter
2 Large Eggs
2 Medium Ripe Bananas
2 tbs Honey
1/4 c Flaxseeds (optional)
1/2 tsp baking soda
1 tsp vanilla
- Preheat oven to 400 degrees.
- Put all the ingredients in the blender and blend until smooth.
- Use liners or grease a muffin tin and pour in the batter. (For added flavor add in chocolate chips, chopped nuts, or blueberries.)
- Bake muffins for 14-16 minutes.
Makes 12 muffins.
